Pizza is special in our house because of my husband. It’s probably his favorite food. I must confess, I didn’t care about pizza, much less wanting to make it, well into our marriage. Scandalous! All my skeletons are out of the closet now.
It took him finding the right dough recipe. Then he began making calzones which turned out crispy and delicious. But something still wasn’t right with the pie. It just wasn’t getting crispy, and while it tasted great, it was missing the perfect crust.
Then we received a pizza stone. Wow! The improvements were immediate. First off all, it made our oven more efficient. Now, the crust is perfect. It’s chewy and crunchy in the right spots. The cheese caramelizes, and the sauce thickens a little. I grow as much basil
as I possibly can as the squirrels allow. We recreate our favorite toppings from green olives and mushrooms to fig, prosciutto, and caramelized onions. Pizza night is probably one of the most fun nights of the week.
I love pizza.
I love it so much I’m growing basil inside. I’m threatening to get another plant so I can dehydrate the leaves and make basil dust to sprinkle on pizza for the perfect margherita bite.
The only time we
go to a restaurant carry out for pizza is for deep dish, but who knows how long that will last? We haven’t found the right pan yet.
